Whenever I’m in Panama City, I eat at Manolo Carocol. Truly an authentic taste of Panama, this local gem is situated in a tiny oasis in the the heart of Panama City's Old Town. There is no menu and diners are served a series of small dishes "omakase" style. It is culinary sampling of the country. Local seafood, poultry and produce all prepared with love in Manuel Madueño's country kitchen. Weary from Panama's seemingly endless array of "all you can eat" buffets, I was directed to Carocol by a local driver. I even extended my layover at Tocumen once so I could drop by and quick lunch. Not to be missed. (My last visit was 2009)
